2 T. butter
1 T. corn starch
2 cups milk
1½ tsp. Salt
¼ tsp. Cayenne pepper
1-28 oz. pkg. frozen O’Brien hash brown potatoes
1-8oz. pkg. Shredded sharp cheddar cheese, divided
⅛ tsp. Paprika

Preheat oven to 350°. Melt butter in a medium saucepan over medium heat. Using wire whip stir
in corn starch. Cook 1 minute. Add milk, salt and pepper: bring to a simmer stirring frequently, until thickened, about 5 minutes. Spray an 11X17 inch baking dish. Layer half of potatoes in dish, spoon half of sauce over potatoes. Top with half of cheese. Repeat layering with remaining potatoes, sauce and cheese. Sprinkle with paprika. Bake for 45 minutes
or until bubbly. Serves 6 to 8.
