1 lb. bulk Italian sausage
2 cloves garlic, minced
2 c. sliced mushrooms
1 med. onion, coarsely chopped
1 green bell pepper, chopped
1 (14 1/2 to 16 oz.) can tomatoes in juice or 2-3 Roma tomatoes, chopped
1 T Italian seasoning
1 lg. zucchini, cubed
Salt & pepper, to taste
Mozzarella cheese, shredded

In large skillet saute sausage and garlic over medium-high heat about 10 minutes or until sausage is lightly browned. Add mushrooms and onion; saute 3-4 minutes. Stir in tomatoes & Italian seasoning.
Bring to a boil, stirring to break up tomatoes. Stir in zucchini. Reduce heat and simmer, stirring occasionally, 15 minutes or until zucchini is tender-crisp. Salt & pepper to taste. Sprinkle mozzarella cheese over top and cover until cheese is melted.
