(OR IN OTHER WORDS A FANCY NAME FOR A WONDERFUL BEEF STEW!!)

4 slices bacon rendered (cooked till almost done but not so raw you wouldn’t eat it)
4 pounds beef chuck roast or English cut roast cut into cubes
salt and pepper
˝ small can plus one tablespoon tomato paste (I use basil seasoned paste)
3 Tablespoons flour
1 cup red wine
2 cans beef broth or 4 cups broth made with bouillon
3 cloves garlic
1 pound white mushrooms
3 cups pearl onions or sliced onions (about one and one half large onions)
pinch of sugar or add more basil to liking
Carrots, potatoes, cubed,

In large dutch oven or heavy pan over medium heat drizzle with olive oil
Cook the bacon and remove from pot
Add beef that has been sprinkled with salt and pepper. Brown on all sides……….remove from pot.
Add the tomato paste and flour to the pot and stir to combine. You may have to add another tablespoon of oil to make a paste..or roux
Add beef and bacon back into pan.
Add mushrooms that have been cooked in separate skillet
add beef broth, wine and basil if desired.
Let simmer until beef is fork tender and vegetables are cooked.
Only other things I may add are green beans at end to heat through
