Fish Tacos Recipe

Fish:
5-6 Cod, Basa or Halibut fillets
2-3 tbsp. butter, melted
1 tbsp. cumin
1 tbsp. garlic powder

1-2 pkgs. coleslaw
Mayonnaise
Lime juice (use 3-4 limes for 2 pkgs. of coleslaw)

Mango Salsa:
2 mangos, chopped
2 red peppers, chopped
3-4 green onions, chopped
2 tbsp. lime juice
2 tbsp. white vinegar
2 tbsp. olive oil
Salt and pepper to taste
1 jalapeño, finely chopped (seeds for desired heat level reserved)

Wraps:
4 c. flour
1 tbsp. baking powder
1 tsp. salt
3 tbsp. oil
1 1/2 c. water

Directions:
Directions:
Preheat oven to 400ºF (205ºC).

Combine butter with spices and brush over fish. Bake fish until it flakes easily with a fork; shred with a fork.

Mix coleslaw, mayonnaise, and lime juice to taste.

Mix all salsa ingredients together in a separate bowl.

Wraps:
Mix ingredients together until no longer sticky. Let sit for 15 minutes then form into balls; roll flat. Fry in non stick pan (can use butter to fry if needed); flip when bubbly and slightly brown.


To serve, put desired amount of fish and coleslaw on wraps, add mango salsa; roll.

May be served with nacho chips or in taco shells (hard or soft) instead of in wraps.
