Oreo Frozen Dessert Recipe

Ingredients: 28 Oreo cookies (the original kind) 3 T. melted butter 1 half gallon vanilla ice cream 2 T. instant coffee granules (I like to use instant espresso) 10 oz. evaporated milk 2 squares unsweetened chocolate 1 c. sugar 2 T. butter Chopped pecans

Directions:Crumble the cookies (I used my food processor) and combine with the melted butter. Press into a lightly buttered 9x13 inch pan and freeze.
Soften the ice cream just enough to stir in the coffee granules. Smooth onto the frozen cookie crust. Freeze.
Combine milk, sugar, chocolate and butter in a heavy saucepan and cook until thick, stirring occasionally. This will take a while--it gets thick right when you start to wonder 'will it EVER get thick?!' Remove from heat and cool to room temperature. Smooth the cooled chocolate over the first two layers. Freeze.
Garnish with cool whip and chopped pecans. Cut into squares and serve. |

Notes: Unless you are making this for a large gathering I would recommend you divide it into two smaller pans. It keeps well in the freezer so you'll have a special dessert on hand for unexpected guests.
This recipe was given to me by my dear friend and neighbor, Claire Bradley. At least I think she's my friend -- maybe she was just trying to get me fat (I absolutely love Oreos)!
