4 large chicken breast or thighs cut in quarters
2 diced onions
2 cloves garlic
1 cup diced celery
2 carrots diced
1 can diced tomatoes 28 oz
1 can tomato paste
1 can water
salt and pepper to taste
1 tsp oregano
2 bay leaves
1 tbsp sugar

Directions:
Directions:
Brown chicken in 2 tbsp. olive oil and 2 tbs butter. Remove chicken. Saute onion and garlic in pan and simmer 2 - 3 minutes then add celery, carrot, tomatoes, tomato paste and water, oregano and bay leaf. Place chicken on top of the sauce, cover and simmer until tender, approximately 25 minutes. Serve over cooked polenta (corn meal), rice, spaghetti or pasta of your choice.
