1 large or Idaho potato
2 T butter, room temperature
Kosher salt
Freshly cracked black pepper
1 to 2 strips bacon, cooked until crisp
2 T cheddar cheese
2 T sour cream
1 T chives

Directions:
Directions:
Preheat oven to 450º.
Pierce the skin of the potato with a fork once or twice on all sides.
Rub butter all over the surface of the potato.
Season liberally with salt and pepper, then wrap tightly in aluminum foil.
Bake the potato for 45 minutes to one hour. Check for tenderness by piercing with a fork or knife.
To assemble, cut the potato down the middle about halfway through potato.
Fluff with a fork - top with cheese, sour cream, bacon and a sprinkling of chives.
