2 medium sweet potatoes
1 T olive oil
1 medium onion, thinly sliced
1 medium red, yellow or green bell pepper, seeded and thinly sliced
⅛ tsp salt - or to taste
⅛ tsp freshly ground pepper
3 T sour cream
1 T chopped fresh chives or scallion tops

Directions:

Preheat oven to 400º. Wash and dry potatoes and pierce several times with fork.
Place in small shallow baking pan and bake 40 to 45 minutes or until they are easily pierced with fork but still offer some resistance.
Meanwhile, in medium-size heavy skillet, heat olive oil over medium heat until hot but not smoking.
Add onion and pepper and saute, stirring occasionally until tender, about 8 to 10 minutes.
Season with salt an pepper. Remove from oven and cut in half. Transfer potatoes to serving plate.
Spoon onion and pepper on top and serve hot accompanied by sour cream and chives.
