1 lb. lean hamburger
½ lb. ground veal
½ lb. ground lean pork
2 eggs, slightly beaten
1/2 c. grated Romano cheese
1 medium onion, chopped fine (approx. ½ c.)
2 T. dried parsley
1 ½ cup fresh bread crumbs
½ c. milk
1 T. oregano
3 T. garlic powder
1 tsp. sea salt
1 tsp. freshly ground black pepper

Directions:

Mix all ingredients until well blended. Form into balls and either fry in skillet or place on rimmed baking sheet lined with non-stick foil or parchment paper and bake at 375º F. until browned. Finish cooking in marinara sauce.

May use all lean hamburger if you prefer. Meatballs will be most tender if fresh bread crumbs are used but seasoned dry crumbs can be substituted; adjust spices accordingly. You can also use fresh garlic (about 4 or 5 cloves) but be sure to chop them really fine.
