1 head red cabbage
1 medium onion, chopped
4 T bacon grease
½ cup apple-cider vinegar
½ cup water
2 T sugar, plus more to taste
1 T salt, plus more to taste

Directions:
Directions:
Remove the outer leaves from cabbage.
Place cabbage on cutting board and remove stem, then cut into quarters.
With the sharp tip of a knife, make a V-shape around the core, then carefully cut away core and discard.
Slice cabbage wedges crosswise to form thin shreds.
In a large skillet over medium heat, heat bacon grease.
Add onion and saute until translucent.
Add red cabbage and onion and cook for 2 to 3 minutes or until cabbage softens.
Add remaining ingredients and simmer, covered, until cabbage is tender, about 30 minutes.
Adjust seasonings to taste.
