2 oz. Monterey Jack cheese, cubed
2 oz. Pepper Jack cheese, cubed
4 eggs, beaten until foamy
1-7 oz. can diced green chilies
⅓ cup milk
½ cup flour
½ tsp. baking powder
1 cup medium cheddar cheese, shredded

Directions:
Directions:
Spray 1½ quart casserole dish with non-stick cooking spray. Layer
chilies and jack cheeses, repeating once for two layers. Mix
together eggs, milk, flour and baking powder, beating until smooth.
Pour over chilies and cheeses. Sprinkle with cheddar cheese. Bake
uncovered at 375° for 30 minutes. Makes 4 to 6 servings.
