2/3 cup pureed peaches
8 tbsp butter
2 eggs
1/4 tsp salt
3 tbsp poppy seeds
1 tsp baking soda
1 cup sugar
1 1/4 cup flour
1/2 tsp vanilla
Directions:
Directions:
Preheat oven to 350ºF Use paper liners or grease 12 muffin size tin. Stir baking soda into peaches in a small bowl, this will foam up. Cream butter with sugar. Add eggs one at a time. Mix alternating flour and peach puree Add salt, vanilla and poppy seeds. Do not over mix. Bake 20 - 25 minutes.
