1 recipe double pie- crust pastry or (already made tart shells)
Raspberry Jam or Apricot Jam
2 eggs, beaten
¾ cup sugar
1 tsp cornstarch
¼ tsp salt
¼ cup butter, melted
1 Tbsp lemon juice
1½ cups coconut


Directions:
Directions:
Roll pastry and cut 1 inch wider than the tops of muffin tins.
Spoon 1 tsp Raspberry jam or Apricot Jam into each tart shell.
Combine remaining ingredients mix well.
Cover the jam with coconut mixture, filling tarts ⅔ full.
Bake on lower rack in 375º for 25 to 30 minutes.
