Ingredients: 1 9” Pie Crust – (homemade or store bought refrigerated.)
EGG MIXTURE 6 lg eggs 1 ½ Cup heavy cream Salt/Pepper to taste 1 Tbs. Parsley flakes 1 tsp. Garlic powder 1 tsp Onion powder
FILLING ½ to 1 lb. of Bacon ¾ Cup diced Peppers (red, green, & yellow) ½ Cup diced onion 1 to 1 ½ Cups chopped Mushrooms (any kind or a mix) 8 oz. of shredded Swiss cheese

Directions:Preheat the oven to 375*
Cut bacon into pieces, Cook and set aside (or cook bacon & crumble)
Chop all vegies & shred the cheese, set aside
Place your pie crust into your pie plate
Layer your filling ingredients starting with some cheese, & bacon, then vegies & onions. Finish with a final layer of the cheese & bacon
Make your egg mixture – Combine all ingredients in a bowl & whisk until well blended (or mix in blender)
Pour the egg mixture over the quiche filling in the pie plate
Bake at 375* for 35-45 min or until cooked through & egg mixture is set. |

Notes: If being used as a main course, it will feed about 4 people if being served with sides or as a side it will serve 8 people
I had left over veggies in the fridge I needed use up so the filling ingredients where just what needed to be used before it went bad. this is a very forgiving recipe so feel free to change it up with what ever is in our fridge or happen to tickle your fancy for that day.
