Ingredients: * 1 1/2 to 2 pound pork loin filet roast * 2 Tbsp olive oil * 1tsp seasoned pepper * 1/2 tsp dried thyme

Directions: Preheat the oven to 375*f.Put the roast in a baking dish, fat side up. Drizzle the olive oil on the pork roast and sprinkle the spices on the roast. Bake uncovered until a thermometer in the center of the roast reaches a temperature of 145 *f. ( about 1 to 1 1/2 hours.) Remove the roast and put on a plate and cover with aluminum foil for 15 minutes prior to slicing and serving. |

Ingredients: * 4 Golden Delicious or any good baking apple * 1 tsp lemon juice * 2 pkgs ( 6 oz each) Stove Top cornbread stuffing mix( Kraft) * 3 1/2 cups of apple juice, divided

Directions: |
Directions:Wash the apples and cut a thin slice from each end to create a flat surface. Remove the core from the apples and stand them up next to each other in a buttered baking dish. Drizzle the lemon juice on the cut surfaces of the apples to prevent them from turning brown while the stuffing is prepared. Heat 3 cups of apple juice to hot and add the two boxes of stuffing mix. Stir until well mixed. Using a spoon stuff each apple with stuffing and add some to the apple top surface. Pour 1/2 cup apple juice around the apples in the dish. Bake the apples for 30 to 45 minutes at 375*f until they are soft and can easily be pieced with a fork. They are baked in the oven with the pork but not as long. Note! Put the extra stuffing in a buttered baking dish and bake covered for 30 minutes at 375*f. |

Ingredients: * 2 cups of chicken broth * 1/4 cup of apple juice * 2 Tbsp corn starch

Directions: |
Directions:Boil the chicken broth in a sauce pan. In a small dish or cup add the corn starch and the 1/4 cup of apple juice. Mix well and add a few spoons of hot broth to the corn starch mixture and stir to mix well. Add the corn starch mixture to the broth and boil for a couple minutes to thicken the gravy. To serve: Slice the pork and serve with a scoop of dressing and a baked apple. Spoon gravy on it all. |
