1 ½ lbs. shrimp, peeled, deveined and tails removed
1 each yellow, red, orange and green bell pepper sliced thin
1 small red onion, sliced thin
1½ tbsp. extra virgin olive oil
1 tsp. kosher salt
several turns of freshly ground pepper
2 tsp. chili powder
½ tsp. garlic powder
½ tsp. onion powder
½ tsp. ground cumin
½ tsp. smoked paprika
lime
fresh cilantro
tortillas, warmed

Preheat oven to 450º. In a large bowl, combine onion, bell peppers, shrimp, oil, salt, pepper and spices. Toss to combine. Spray a baking sheet with cooking spray. Spread shrimp mixture evenly on baking sheet. Cook at 450º for about 8 minutes. Turn oven to broil and cook for an additional 2 minutes or until shrimp is cooked through. Squeeze lime juice over fajita mixture and top with fresh cilantro. Serve in warm tortillas
