Ingredients:  
1/2 lb mild Chorizo sausage or garlic or turkey salami
1 large onion chopped
1 tsp minced garlic
1 cup carrot chopped fine or shredded
4 cups grated zucchini
1 tsp Italian seasoning
1/2 tsp basil
1/2 tsp oregano
1 tsp cumin (optional)
2 tins chicken broth or chicken stock in the box
3 - 4 tins water

Directions:
Directions:
Saute sausage with onion in oil. Add rest of ingredients and simmer 30 - 40 minutes or hit soup setting on Instant Pot for 20 minutes. Optional, add 1/2 cup shell pasta if desired.

I used some homemade frozen chicken stock that I had in the freezer. Remember to save bones skin and veggie peels etc. to make a big pot of broth when you have enough or need to clean out the freezer. My nephew Aaron calls it bone soup.
