Mexican Dinner:
1 lb organic ground beef, browned
Saute 1 med onion, chopped
Saute 1 red pepper, chopped
Add taco seasoning to taste
1 can stewed tomatoes

Guacamole:
2 ripe avocados
2 tsp lime juice
1 T cilantro
¼ c chopped red onion
¼ tsp sea salt
Optional ½ of a jalapeno
Directions:
Directions:
Cover and simmer all ingredients for the Mexican dinner for 25 minutes, stirring occasionally. Top with a handful of shredded cheese and guacamole.
