2 Cups White Rice
2 12 oz. cans crushed pineapple
1 box Vanilla Pudding (and all ingredients associated with making the pudding recipe)
Whipped Cream


Directions:
Directions:
- Add 3 cups of water to large pot and add 1/4 teaspoon of salt
- Heat water until boiling
- Add White Rice
- Cook Rice until tender/ then drain and rinse
- Once rinsed, in a large serving bowl, add the rice and crushed pineapple. Stir.

Meanwhile:

- Cook Vanilla Pudding as directed on box
- Once cooked, allow the pudding to cool
- Once pudding is completely chilled, add to the rice/pineapple mixture.

Then:
- Pour whipped cream into a chilled bowl
- Beat whipped cream until peaks form at the top of the mixture

Finally:
- Fold whipped cream into the rice/pudding/pineapple mixture

Chill:
-1 hour or more.

Mom has made this recipe ever since I can remember. I used to generously eat 4 to 5 servings at a time, but since had learned that eating too much of this sinful dessert, it is probably best to eat it in moderation. It has been a family favorite for at least 30 years.
