2 Avocados, ripe
Chopped Cilantro
1 Jalapeno, finely chopped
1/4 Onion, finely chopped
1/2 Tomato, finely chopped
Lime juice to taste
Salt to taste

Directions:

Peel Avocado and remove core.

Mash the avocado until desired consistency. Add onion, jalapeno, cilantro and tomato and mix well.
Add lime juice and salt to taste.

(The cilantro -- I use about 1/4 cup chopped, but you can use more or less depending on your preference)

Serve with tortilla chips. If you don't have tortilla chips, but have some corn soft taco shells -- cut the corn taco shells into quarters and fry in vegetable oil until crispy. Sprinkle with sea salt while still hot. Works best with shells that are a little stale -- or open package and leave out for an hour or so.
