Ingredients:  
3 cups mashed potatoes
reserve enough water from cooking potato to make soft dough
3 cups flour
3 eggs
1/3 to 1/2 cup grated cheese, cheddar, parmesan or ricotta
1/2 tsp salt

Directions:
Directions:
Mix all ingredients to form a soft manageable dough. Roll into logs about 1 inch thick. Cut into 1/2 inch pieces. Roll with fork for shape if desired. Freeze single layer of pasta on cookie sheet, then put in bags until ready for use then cook in boiling salted water until they float to the top. Serve with tomato sauce or preferred sauce. ***I cook potatoes with 1/2 medium onion for extra flavor.

Auntie Doris Thompson (nee Doris Bernardi) and Auntie Olympia Contardo (nee Olympia Bernardi) and Ida Colosimo (nee Ida Bernardi taught me the joy of Gnocchi and Auntie Doris showed me how to make them at her house in Thunder Bay near the old family hotel in West Fort. Auntie Doris said you have to feel the dough to know how much potato water and flour to use so they are tender but not too tender
