2 cups whole wheat flour
2 tsp baking soda
2 tsp salt
2 cups buttermilk
1/4 cup brown sugar
1/4 cup honey
2 cups raisins and or dried cranberries chopped
1/2 cup pecans chopped
1/2 cup pumpkin seed roasted
1/2 cup sunflower seeds
1/4 cup sesame seeds
1/4 cup flax seed ground
2 tbsp fresh rosemary chopped

Directions:

In a large bowl, stir together flour, baking soda and salt. Add buttermilk, brown sugar and honey and stir well. Add remaining ingredients and stir just until blended. Pour into two loaf pans that have been sprayed with non stick spray. Bake350º F for 45 minutes until browned and springy to the touch. Remove from pans and cool on wire rack. The cooler the bread the easier it will be to slice really thin. I left them overnight covered with a tea towel or partially freeze them before slicing. Slice loaves as thin as you can (the slices should start to curl slightly as you cut them). Place in single layer on ungreased cookie sheet and bake 300º F for 15 min, then flip over and bake 10 min until crisp and deep brown.
