1/4 c. extra virgin olive oil
7 cloves garlic, peeled and sliced thin
28 oz. can San Marzano tomatoes (certified D.O.P. if possible)
1 c. water
1 tsp. kosher salt
1 large fresh basil sprig, or 1/4 tsp. dried oregano (more to taste)
pinch red pepper flakes

Pour tomatoes into a large bowl and crush by hand. Pour 1 cup water into the can and slosh it around to get the tomato juices. Set aside.

Heat the oil in a large skillet over medium heat. When hot, add garlic.

As soon as it is sizzling (don't let it brown) add the tomatoes and reserved tomato water. Add the red pepper flakes, oregano (if using), and salt. Stir.

Place basil sprig (if using), including stem, on the surface. Let it wilt, then submerge it in the sauce.

Simmer until thickened and the oil on the surface is deep orange - about 15 minutes. If using oregano, taste at 10 minutes and add more oregano if desired. Discard basil, if using.
