9 cups (9 med) sliced cucumbers
1 cup chopped onion
1 cup chopped green or red pepper (I put in each as makes the salad more colorful)
1 cup chopped celery
1 ½ Tbsp. salt
2 cups sugar
1 cup cider vinegar
1 tsp. celery seed
1 tsp. mustard seed

Directions:
Directions:
In ice cream pail combine first 5 ingredients. Mix well. Let stand at room temperature for 30 min.
DO NOT drain.
In small bowl, combine remaining ingredients. pour over salad, stirring until thoroughly mixed. Refrigerate overnight before serving. Store in refrigerator up to 3 months or more.. (I have actually had some for up to 6 months)
