1 medium onion, minced
1 stalk celery, finely chopped
4 tbsp butter
1 lb fresh lump crab meat, shredded
3 cups fish stock, or chicken
1/2 c clam juice
1/4 c dry sherry
1 c heavy cream
1 tsp paprika
fresh chives, chopped

Directions:
Directions:
Saute the onions and celery in butter for 5 minutes. Put all other ingredients except the cream, fresh chives and paprika in a medium stockpot, bring to a boil and simmer for 20 minutes. remove from heat and cool for 30 minutes. Reserve about 1/2 c of the crab meat and puree remainder of crab with other ingredients in the blender. Return to stovetop and reheat, stir in cream and crab meat, garnish with chives and paprika.
