2 tbsp vegetable oil
1 red bell pepper, diced
1 large potato, diced
2 1/2 c milk
1/2 c broccoli, chopped
1 c shredded cheese
1 red onion, diced
3 garlic cloves, crushed
2 tbsp flour
1 1/2 c vegetable stock
3 cups corn (fresh or frozen)
salt and pepper

Directions:
Directions:
Heat oil in pan. Saute onion, pepper, garlic and potato, stirring frequently 3-5 minutes. Stir in flour and cook for 30 seconds. Gradually stir in milk and stock.

Add broccoli and corn, bring to a boil, stirring constantly. Reduce heat and simmer for 15 minutes until veggies are tender. Stir in 1/2 c cheese until it melts. Season with salt and pepper, garnish with the rest of the cheese.
