1 1/2 Cups Flour
1 Cup Sugar
1/2 Cup Whole Wheat Flour
2 teaspoons Baking Soda
2 teasspoons Cinnamon
1/2 teaspoon Salt
3 Large Eggs, Beaten
1/2 Cup unsweetened Applesauce
1/2 Cups Canola oil
2 teaspoons Vanilla
1 1/2 Cups Shredded pelled apples (about 2 medium)
1 Cup shredded carrots ( about 1 medium)

Directions:
Directions:
1. Preheat oven to 350. Spray muffin cups or use paper cups.
2. Wisk together, flour, sugar, whole wheat flour,baking soda, cinnamon and salt in a large bowl and set aside.
3. In large boul wisk together eggs,applesauce, oil and vanilla, Stir in apples and carrotsthen stir in the flour mixture just until incorporated. Spoon the batter into muffin cups, filling 1/2 full. Bake about 25 minutes until toothpock comes out clean, Serve warm.

Freeze well, place on cookie sheet and freeze until hard, then place in zip lock freezer bags for up to 3 months. To reheat place frozen muffin in 350 oven until hot (about 20 minutes.
