1 tsp Dijon Mustard
1 tsp xylitol or good-quality maple syrup
1 T white wine vinegar
3 T extra virgin olive oil
1 T very finely chopped shallot
Coarse sea salt
Freshly ground black pepper

Directions:
Directions:
Whisk together the mustard, xylitol or maple syrup and white wine vinegar.
While whisking, slowly pour in the olive oil until emulsified.
Stir in the shallot.
Season to taste with salt and pepper.
