Pancake Batter

2 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
½ tsp salt
3 T sugar
2 large eggs, slightly beaten
3 cups buttermilk
4 T unsalted butter, melted, plus ½ tsp for griddle

Directions:
Directions:
1. Heat griddle to 375ºF. Whisk together flour, baking powder, baking soda, salt and sugar in a medium bowl.
2. Add eggs, buttermilk and 4 T melted butter, whisk to combine. Batter should have small to medium lumps.
Heat oven to 175º (Test griddle by sprinkling a few drops of water on it. If water bounces and spatters off griddle, it is hot enough). Brush with melted butter.
3. Ladle about ½ cup pancake batter in pools 2” apart. When pancakes have bubbles on top and are slightly dry around edges, flip over. Cook until golden on bottom.

Keep finished pancakes warm in 175ºF oven.

1 T lemon juice or white vinegar per 1 cup milk

Add lemon juice or vinegar to milk and let sit at room temperature 10 minutes to “sour.”
