8 6-inch whole wheat tortillas
Cooking spray or EVOO
1 tbsp Dijon mustard
1 cup shredded provel
4 oz thinly sliced ham
½ small onion, extra thinly sliced
Pepper
1 ½ tbsp apple butter
2 small apples (red & green) thinly matchstick sliced
Lemon juice
Ground cinnamon

Directions:

Spray 4 tortillas with cooking spray. Lay oil side down on a cutting board. Brush with mustard and sprinkle each with half of the cheese. Top each with a layer of ham, onion, pepper and remaining cheese.

Brush the apple butter on the remaining tortillas. Place each one on top of the ham/cheese tortillas.

Heat a large nonstick skillet over medium high heat. Lay a quesadilla oil side down and cook till golden brown and cheese starts to melt, about 2 minutes. Spray the top of the quesadilla with cooking spray, turn and cook till golden brown. Remove and set aside. Repeat with remaining quesadillas.

Cut each quesadillas into 4 wedges. Toss the apples with lemon juice and cinnamon. Serve.
