4 - 6 ounce salmon filets (tail end is less bones)
2 garlic cloves or 2 tablespoon squeeze garlic
1 inch ginger or 1 1/2 tsp squeeze ginger
1/4 cup sweet soy sauce
1 juice from one navel orange

Pat the salmon fillets dry and season with salt and pepper on both sides. Heat 1 tablespoon of oil on medium-high until hot. Add the seasoned salmon fillets (skin side up first if skin is on); cook 2 to 3 minutes per side, or until crispy and golden brown. Transfer to a plate and set aside

Heat the same pan on medium until hot. Add the garlic and ginger; cook, stirring occasionally, 30 seconds to 1 minute, or until fragrant. Add the orange juice, sweet soy sauce and ¼ cup of water. Cook, stirring occasionally, 30 seconds to 1 minute, or until well combined. Add the cooked salmon fillets; cook, spooning the sauce over top, 1 to 2 minutes, or until the sauce is slightly reduced. Remove skin and transfer to a serving dish

King salmon is firmer and stays together better. Sockeye is easier to get and cheaper. Leave the skin on sockeye so it stays together and remove after cooking. We first had this dish when trying Blue Apron - light calories and great taste! Doubling the recipe so there is leftover salmon works well. Leftovers make awesome salmon patties for salmon burgers.
