4 cups chicken, cooked and cubed
1 cup corn
1 cup peas
1 cup green beans
1 cup yellow potatoes, diced
⅓ cup onion, chopped
⅓ cup butter
⅓ cup flour
⅔ cup milk
1 ¾ cup chicken broth
½ tsp salt
½ tsp ground pepper
½ tsp dried rosemary
2 sprigs fresh parsely, chopped
2 9-inch unbaked pie crusts

Preheat oven to 450°F. Place potatoes, corn, peas and green beans in a large saucepan; add water to cover. Bring to a boil. Boil 8-10 minutes or until potatoes are cooked. Drain. Add chicken and set aside.

In a large saucepan, cook onions in butter until soft and translucent over medium high heat. Stir in flour, salt, pepper, rosemary and parsley. Slowly whisk in chicken broth and milk. Simmer over medium-low heat until thickened. Remove from heat and set aside.

Grease 9-inch pie pan. Place one pie crust in pan. Top with chicken mixture then pour in the sauce. Cover with the other pie crust, seal edges. Make several small slits in the top crust to allow the a steam to escape.

Bake uncovered for 30-35 minuted, or until pastry is golden brown and filling is bubbly. Cool for 10-15 minutes before serving.
