4 boneless skinless chicken breasts, cut into chunks
Salt and pepper to taste
1/4 c. canola oil
2 garlic cloves, minced
2 onions, chopped
2 tart apples, chopped
1 Tbsp. tomato paste
1 Tbsp. flour
1 - 2 Tbsp. curry powder
2 1/2 c. coconut milk
Hot cooked rice

Directions:

Season chicken with salt and pepper. In a large skillet, cook chicken in oil until golden brown. Remove and set aside. Leave 2 Tbsp. drippings in skillet; add apples, garlic and onions and saute. Stir in tomato paste, flour and curry powder. Cook for 1 minute. Gradually add coconut milk. Continue to cook until mixture thickens and comes to a boil.
Return chicken to skillet and reduce heat. Simmer, covered, for 25 - 30 minutes.
Serve over rice.
