Dough: 2 Cups of A.P flour
1/4 cup sugar
1/4 tsp salt
1/2 lb butter, small dice and chilled
1 egg yolk
1/2 cup cold water
1T honey
Apple filling: 6 honey Crisp apples, pleededand sliced
1/2 cup sugar
1/2 cup dark brown sugar
2 T cinnamon
1 tsp ginger
1 pinch nutmeg
2 T cornstarch
2 T A.P. flour
Topping: 6Tsp butter, 2 eggs, 2 T milk and 6 T sugar in the raw

01 Preheat oven o 425 F. Place 2 cup flour, 1/4 cup sugar, and salt in food processor. Add butter chilled butter and pulse about 10 times, or until butter forms small kernels and resembles oatmeal.
02 Combine egg yolk, water and honey and add to the processor, all at once and pulse until 6dough comes together. Turn dough out to a floured surface, knead into a disk, wrap and chill at least 1 hour.
03 Place dough onto a floured surface and roll from the center out, turning a quarter turn each time, until dough is 1/4" thick. Cut into 8" circles, Stack scrap[ dough and reroll until you finish the dough.
04 In a large bowl combine 1/2 cup sugar, 1/2 dark brown sugar, cinnamon, nutmeg, ginger,
,cornstarch and 2 T, A.P. flour. Add apples and toss. Place apple mixture in the center of each tart, leaving 2 " al around. Lift side of dough up and over the apples, pinching and pleating the dough to surround the apples. Leave a 2" hole in he center to display the apples.
05 Top each tart with a tsp of butter. Mix egg and milk together and brush the dough. Sprinkleech tart with raw sugar. Bake tarts for 5 minutes then reduce toven to 325 F and bake for 15 minutes, or until golden. Serve..
Carmel Sauce: 4 oz sugar,2T water, 1tsp light corn syrup,1 T butter, 1/2 cup heavy cream.
Mix sugar and water and cornsyrup in a pot then heat until lightly golden. remove fom heat, mix butter and cream,then coo. Keep refrigerated.l
