3 celery ribs, chopped
2 medium onions, chopped
1 medium green pepper, chopped
1/2 small head cabbage, shredded
1 cup shredded carrots
2 medium leeks (white portion only), chopped
2 japaleno peppers, chopped
6-8 garlic cloves, minced
3 TBSP olive oil
4 medium potatoes, peeled and cubed
4 cups chicken broth
2 cups water
1/2 tsp pepper
1/4 tsp salt
3 Tbsp flour
1/4 cup milk
1/2 c sour cream
green onions, chopped

Directions:
Sauté the celery, onions, leeks, green pepper, jalapenos, carrots, garlic & cabbage in oil until tender. Add potatoes, brother, water, pepper and salt. Bring to a boil. Reduce heat, cover and simmer for 10-15 minutes or until potatoes are tender, stirring occasionally. Cooking time will depend on size of potatoes.

Combine flour and milk until smooth, stir into soup. Cook and stir for 2 minutes or until thickened and bubble. Reduce heat to low. Stir in sour cream and green onion until blended, heat through (do not boil).

1 cup = 180 calories if made with fat free milk and reduced fat sour cream.
