Ingredients: * 1 1/2 pounds chicken tenders( about 18) * 1 1/2 cup of buttermilk * 1 1/4 cup grated parmesan cheese * 3/4 cup plain bread crumbs such as Panko or Progresso * 6 Tbsp olive oil

Directions:Preheat oven to 475*f. Line two cookie sheets with parchment paper. Brush the parchment paper surface with olive oil. Place the buttermilk in a large glass bowl. Add the chicken tenders and stir to coat . Let the tenders marinate for 30 to 60 minutes. Stir the parmesan and bread crumbs together in a shallow bowl or pie plate. Remove the chicken tenders from the buttermilk and dredge them in the bread crumb mixture, pressing them to adhere. Arrange the coated chicken on the prepared cookie sheets. Drizzle the remaining olive oil over the chicken tenders and bake until they are cooked through and golden brown, about 12 to 15 minutes. Turn the chicken over about half way through the cooking time to get more even browning. Transfer to a platter and serve with your favorite dipping sauce or eat just plain. A tossed salad is very good complement to this chicken . 1) You can make buttermilk by adding 1 Tbsp of lemon juice or vinegar to a cup of milk and stir and let set for at least 5 minutes. The buttermilk moistens and tenderizes the meat. 2) You can substitute sliced chicken breasts for the tenders. 3) A good dipping sauce is your favorite barbecue sauce. |
