1 lb. cheddar cheese, sharp (or New York Sharp)
1 stick of butter, soften
2 cups flour, all purpose
1/2 - 1 t. red pepper (to taste)

Directions:
Directions:
Preheat oven to 400º. Mix all ingredients together. I use a food processor but can mix by hand. Easier to mix if you let cheese and butter come to room temperature first. Put through a cookie press onto a cookie sheet. We use the flat ribbon disc and make them about 3-5 inches long. Bake 8-10 minutes (or to the brownness you like). Remove from oven and sprinkle with salt. Put on paper towels to cool.
