* 1 cup of diced , cooked chicken
* 1 cup of chopped celery
* 2 cups of chopped onion(separated)
* 1 cup of chicken broth
* 1 cup sliced mushrooms,optional
* 1/3 cup soy sauce
* 2 cloves minced garlic
* 1 1/2 Tbsp cornstarch
* 3 Tbsp cooking oil
* 1/2 tsp pepper

Directions:
Directions:
Add one cup of onions to the oil in a fry pan and cook covered, stir frequently until onions are caramelized(dark brown) and reduced. Add the celery , rest of onions , mushrooms and garlic, stir to mix and slightly brown with the caramelized onions. Add the broth , soy sauce and pepper. Bring to a boil and simmer five minutes.
Add the chicken and simmer until the celery is crisp tender.
Mix the cornstarch with a couple Tbsp of cold water and then add some of the hot broth from the chow mien , stir and drizzle the mixture into the chow mien , stirring constantly. Boil one minute to thicken.
Serve with rice and chow mien noodles.
The caramelized onions is what really flavors and gives this chow mien it's dark color.
