* 1/2 cup butter
* 1 cup chopped onion
* 1 cup chopped bell pepper
* 1/4 pound sliced mushrooms
* 1/2 cup all purpose flour
* 1 tsp salt
* 1/2 tsp pepper
* 1 tsp dried thyme
* 1 tsp garlic powder
* 1 tsp poultry seasoning
* 1/4 cup dry sherry
* 1 can evaporated lo fat 2% milk
* 1 can (14 oz) chicken broth
* 2 cups frozen mixed vegetables thawed and cooked
* 2 cups diced cooked chicken

In a large sauce pan, melt the butter , stir and cook the onions, bell pepper and mushrooms for 5 minutes. Blend in the flour , salt, pepper, thyme, garlic powder and poultry seasoning. Cook over low heat , stirring constantly until mixture is bubbly, Stir in the sherry, evaporated milk and chicken broth.. Heat to boiling ,stirring constantly. Boil for 2 minutes. Add the mixed vegetables and chicken and heat through.Serve on toast or baking powder biscuits.
Note: If the mixture is too thick add more evaporated milk or just plain milk.
