* 2 large baked potatoes
* 1 Tbsp butter
* 2 eggs whisked
* 1/2 cup diced cooked ham or 4 bacon strips cooked and chopped
* 1/3 cup "top-the -tater" sour cream
* 1/3 cup shredded Cheddar cheese
* 1/2 tsp of both salt and pepper or to taste
* additional "top the tater" sour cream when potatoes are served

Scramble the eggs in the butter and set aside.
Scoop out the potato pulp from the skins. In a bowl mash the potatoes and mash in the sour cream.
Chop the cooked eggs.
Stir in the eggs, meat, Cheddar cheese and spices.
Divide the potato mixture into one cup elongated rolls,
Place the potato rolls in a lightly buttered baking pan and mold them to look like half of a potato. Bake uncovered at 325*f for 12 to 15 minutes or until heated through. Serve with additional sour cream if desired.
Note: A) The potato rolls can also be molded in microwave safe dishes and finished in the micro wave rather than the oven.
B) You can use sausage meat or any other meat you desire instead of ham or bacon
C) About one packed cup of potato mixture will make a serving. Form potato into elongated rolls using the back of two tablespoons.
