* 6 cups of assorted sliced and/or diced vine vegetables
such as zucchini, bell peppers,summer squash
*1/4 cup vegetable or olive oil
*1/2 tsp of both salt & pepper or your favorite
vegetable spice.

Directions:
Directions:
Pre heat oven to 400*f.
Mix vegetables in a large bowl
Mix the oil and spices in a small bowl
Sir the oil and spices into the vegetables and mix well
Spread vegetables out on a cookie sheet and bake for 12 to 15 minutes.
6 cups of raw vegetables will make about 5 cups after roasting
Serve as a side dish.
