* 1 pound turnips
* 1 pound rutabagas
* 1 pound carrots
* 1 pound parsnips
* 1 large red onion chunked
* 1/2 cup olive oil or vegetable oil
* 1 tsp black pepper
* 2 tsp kosher (course) salt
* add seasonings such as
garlic powder , rosemary etc,

Preheat oven to 400*f .
Cut the first 4 ingredients into one inch pieces. If your carrots are small enough leave them whole. Mixed these diced vegetables with the red onion in a large bowl.
Mix the oil and spices in a small bowl and stir them into the vegetables. Mix to coat the vegetables. Layer the vegetable mixture in a single layer on a cookie sheet bake for an hour or until cooked and tender stirring every 15 minutes.
Note: They can be prepared ahead and reheated in a 400*f oven for a 10 or more minutes to reheat ,or microwave them to reheat.
The number of servings varies with the amount roasted. Any 4 lb combination of hardy root vegetables will yield 6 servings.
