4 very ripe bananas
1/3 c. melted butter, cooled
2/3 c. sugar
1 egg
1 t. vanilla
1 t. baking soda
pinch of salt
1 1/2 c. all purpose flour
1 c. Ghiradelli semisweet chocolate chips

Directions:
Directions:
1. Preheat oven to 350º.
2. Grease muffin tins or line with paper cups.
3. Peel bananas, put them in a bowl with the melted butter and mix all together with a fork.
4. Keep blending until the mixture is creamy and smooth, not chunky.
5. Add sugar, egg and vanilla and mix just until combined.
6. Stir in salt and baking soda.
7. Add flour and chocolate chips and mix until just combined. Do not overmix!
8. Divide into muffin tins.
9. Bake until toothpick pulls out cleanly, about 18 - 20 minutes.
