Ingredients: ½ cup walnut chopped ½ cup non - fat yogurt 2 tablespoons mayonnaise 2 tablespoons minced fresh flat-leaf parsley 1 teaspoon honey ½ lemon, zest finely grated Freshly ground black pepper 2 ribs celery (with leaves), sliced into ½ - inch pieces ( leaves chopped) 2 large crisp apples, such as (gala) ¼ cup golden grapes ½ lemon, juice

Directions:Preheat oven 350º Spread nuts on baking sheet and toast 8 -10 minutes.Cool and break into small pieces. whisk yogurt, mayonnaise, honey, and lemon zest, in a large bowl, and season with black pepper. Half core apples and cut into ¾- inch pieces leaving the skins intact. Add celery, apples, and raisins, in the bowl, and sprinkle with lemon juice; Then toss gently. Cover and refrigerate if not using immediately. When ready to use, sprinkle with nuts. Use lettuce leaves to cover serving plate; and fill with the salad. |

Notes: Had this one time many years ago, My kids were very young, Obviously, they didn't know what was good for them because they didn't like it. Me, well I loved it. Hopefully, now that they are much older they will like it. Love all my brats.
