½ cup walnut chopped
½ cup non - fat yogurt
2 tablespoons mayonnaise
2 tablespoons minced fresh flat-leaf parsley
1 teaspoon honey
½ lemon, zest finely grated
Freshly ground black pepper
2 ribs celery (with leaves), sliced into ½ - inch pieces ( leaves chopped)
2 large crisp apples, such as (gala)
¼ cup golden grapes
½ lemon, juice

Preheat oven 350º Spread nuts on baking sheet and toast 8 -10 minutes.Cool and break into small pieces. whisk yogurt, mayonnaise, honey, and lemon zest, in a large bowl, and season with black pepper. Half core apples and cut into ¾- inch pieces leaving the skins intact. Add celery, apples, and raisins, in the bowl, and sprinkle with lemon juice; Then toss gently. Cover and refrigerate if not using immediately. When ready to use, sprinkle with nuts. Use lettuce leaves to cover serving plate; and fill with the salad.

Had this one time many years ago, My kids were very young, Obviously, they didn't know what was good for them because they didn't like it. Me, well I loved it. Hopefully, now that they are much older they will like it. Love all my brats. Larry, Melissa, Tricia, and as of 2001, I've added Josie, and Diana, hope you make this some day and like it as much as I do,
