2 pounds of salmon fillets ,cut into 4 to 6 oz. chunks,
Marinade:
*1/2 cup soy sauce
*1/4 cup Sherry or white wine
*1/4 Cup water
*1/4 cup packed brown sugar
*1 tsp ginger powder
*1/3 cup sliced green onions
*4 to 6 cloves minced garlic
*5 tsp sesame oil or olive oil
*1 Tbsp toasted sesame seeds

Remove the skin from the fillets and with a sharp knife remove the gray fat layer which is under the skin. This fat layer can cause off flavor and should be removed before or after cooking, before serving the fish
In a bowl mix all the marinade ingredients together . Reserve 1/2 cup of marinade in a container and refrigerate for use as basting sauce during grilling.
Put the fish chunks in a plastic sealable bag and pour the marinade over the fish , seal the bag and refrigerate. Rotate the fish periodically to assure even marinating of the fish.Refrigerate for at least 3 hours prior to grilling.
Prepare the grill for medium direct heat.. Place strips of aluminum foil, about 5 inches wide, on the grill. Roll up the edges of the foil about a 1/4 inch to form a low edged pan. A foil strip can hold several fish chunks. Place the fish on the foil and cook 5 to 8 minutes basting with the reserved marinade. Carefully turn the fillets over and cook until the fish is cooked and flakes easily. Basting fish while it cooks. Without the skin the fish is fragile and must be handled carefully. Remove fish from the foil on the grill to a serving platter ..
Note: 1) If no wine or Sherry is available, sub with 1/4 cup water and a tsp of rum
or brandy extract.
