* 3 Tbsp butter or margarine
* 2 large eggs
* 2 Tbsp milk or water
* 1/2 cup yellow corn meal
* 1/2 cup all purpose flour
* 2 tsp paprika
* 2 tsp garlic powder
* 2 lbs fresh or frozen(thawed) fish filets

Directions:

Pre heat oven to 400*f .
Coat a 9x13 baking dish or pan with the butter.
Wisk the eggs and milk in a medium bowl.
Mix the corn meal, flour, paprika and garlic powder in a medium bowl. Dip fish filets in the egg mixture , coating both sides, then in the corn meal mixture. Place filets in the buttered baking dish.
Bake, uncovered, for 20 to 25 minutes, or until fish flakes easily when tested with a fork.
Serve with your favorite tartar sauce or malt vinegar.
Note: 1) We rinse the fish in cold water and dry on paper towels prior to dipping in the egg mixture.
2) Any white fish will work. We use Cod and Tilapia. Pan fish would cook faster than a thicker filet.
