Meatloaf Bottom

1 Pound Ground Beef
1 Large Egg
½ Cup Bread Crumbs
⅓ cup Diced Green Peppers
⅓ cup Diced Onion
1 Minced Clove Garlic
1 Teaspoon Worcestersire Sauce
1 Tablespoon Grated Parmesan Cheese
1 Tablespoon of Oregano
1 Tablespoon of Parsely
Salt and Pepper


Mashed Potato Topping

1 + ½ Pounds Potatoes, peeled and cubed (6-8)
3 Tablespoons Butter
A Splash of Milk or Chicken Stock
1/2 a Block of Cream Cheese
2 Tablespoons Snipped Chives
1 Cup of Grated Cheddar Cheese
Salt and Pepper
Crumbled Bacon

Directions:
Directions:
1) Place the potatoes in a medium saucepan and cover with cold water. Bring to a boil over high heat then turn down to a simmer and cook until fork tender 15 - 20 minutes.

2) Drain well in a colander and move into a bowl. Add all other ingredients for Mashed Potatoes (Mince the Cheddar cheese and Bacon) and smash them with a potato masher.

3) Preheat the oven to 400.

4) Grease a 9 or 10-inch deep dish with butter.

5) Combine all the meatloaf ingredients together in a medium bowl with a fork.

6) Press the meatloaf mixture into the pie pan evenly over the bottom.

7) Spoon the mashed potatoes over the meatloaf evenly from edge to edge.

8) Sprinkle the cheese over the mashed potatoes

9) Bake 30 minutes.

10) Remove from the oven and let it set 5 - 10 minutes before serving.

11)Garnish with crumbled bacon.
