8 medium white potatoes
2 Tbsp butter
2 Tbsp olive oil
1 C vegetable stock
1 C whole milk
4 cloves garlic
1 shallot or leek stalk
8 oz package cream cheese
1 C parmasean cheese
1 Tbsp chopped parsley
salt & pepper

Peel and thinly slice potatoes
Heat oven... 375
In saute pan, heat butter & oil, saute shallots and garlic for 3 mins. Add cream cheese and melt. Mix stock and milk together. Whisk as you slowly add to cream cheese mixture. Add 1/2 C Parmesan, parsley, salt and pepper and whisk. Place potatoes in baking dish and pour cream cheese mixture over potatoes.... sprinkle remaining Parmasean cheese on top. Bake for 25 mins... til top is brown
