l lb fresh salmon filet
Olive oil
garlic salt and pepper
1 medium yellow onion, diced
1/2 red bell pepper, seeded and diced
3 T butter, divided
1 cup PANKO crumbs
2 eggs, lightly beaten
3 T maynoise
1 tsp worcestershire sauce
1/4 cup parsley finely chopped

Preheat over to 425 degrees. Line baking sheet with parchment and place salmon, skin side down. Drizzle with olive oil and season with garlic salt and pepper. Bake uncovered about 10-15 minutes or until just cooked through. Remove from over, cover with foil and let rest 10 minutes. Flake with fork discarding skin and any bones.
Heat a skillet over medium heat with the olive oil and 1 T butter. Cook onion and red pepper until golden and softened (about 7 minutes.. Remove from heat. In mixing bowl combine the salmon and onion mixture, the bread crumbs, mayonnaise, Worcestershire sauce, 1 tsp garlic salt, pepper and chopped parsley. Stir to combine well. Form into patties. In a non-stick pan heat 1 T oil and 1T butter until hot. Add salmon patties and sauté for 3-4 minutes per side, until golden brown. Remove and drain on paper towels. Serve with tartar sauce.
