VINAIGRETTE
1/4 cup white wine vinegar
1/2 cup sliced strawberries
1 tsp finely chopped fresh ginger
2 T Dijon mustard
3 T honey
1 T oilve oil
1 T poppy seeds
GLAZED ALMONDS
1/2 cup sliced almonds
2 T sugar
SALAD
2 bunches spinach, stemed and rinsed and dried
2 cups strawberries stemmed and sliced
1/2 cup sliced red onions

Directions:
In a blender combine the vinegar, strawberries and ginger and blend to a smooth puree.
In a bowl combine the mustard and honey. Whisk in the pureed strawberry mixture. and slowly whisk in oil until smooth. Blend in poppy seeds
GLAZED ALMONDS
Place almonds and sugar in a small skillet and cook and stir over medium heat until sugar carmalizes and almonds are brown, stirring constantly. Pour mixture onto parchment paper and let cool.
SALAD
Assemble salad ingredients and toss. Add dressing and toss to combine. Sprinkle almonds on top.
